Located on the left bank of the Serein River, this vineyard site lies parallel to Les Vaillons and enjoys an excellent south-east exposure. The soils date back to the Secondary Era and consist exclusively of Kimmeridgian limestone and clay.
This wine is vinified exclusively in French oak barrels that have been used for one to five vintages, with ageing on the fine lees. After approximately 12 months in barrel, the wine is racked and transferred to stainless steel tanks for several additional months of ageing. It is then bottled following a light filtration.
Elegant and refined, this wine offers remarkable aromatic complexity and a distinctive saline finish that is characteristic of this vineyard area. The palate is beautifully textured. Serve at around 13°C, for example with chicken in a cream sauce or butter-poached fish.
